Ingredients

  • 1 cup shredded Cheddar cheese
  • 3/4 pound thinly sliced cooked ham
  • 1 1/2 pounds unpeeled red potatoes
  • 1 medium onion
  • 1 (9 oz.) package frozen spinach
  • 1 egg
  • 1 tablespoon water

Instructions

  1. Press the first crust into the bottom and up the sides of a pan.
  2. Sprinkle one-third of the cheese on the bottom crust.
  3. Layer half of the ham, half of the potatoes, and half of the onion slices over the cheese.
  4. Spread the thawed and drained spinach evenly over the onion layer.
  5. Top with another third of the cheese, then add the remaining ham, potatoes, and onions.
  6. Sprinkle the remaining one-third of the cheese over the onion layer.
  7. Gently press the mixture into the pan.
  8. Place the second crust on top and pinch to seal the edges.
  9. Cut slits in the top crust to allow steam to escape.
  10. Mix the egg and water well to make an egg wash.
  11. Brush the top crust with the egg mixture.
  12. Cover and refrigerate overnight if desired.
  13. Bake at 375°F (190°C) for 55 to 70 minutes until the crust is golden brown and the filling is heated through.
