Lemony Potatoes offer a bright, tangy flavor with Parmesan and paprika accents, perfect as a flavorful side dish for family dinners or casual gatherings.

Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. lemon juice
  • 1 1/2 tsp. grated lemon rind
  • 1/8 tsp. salt
  • 3 medium potatoes, unpeeled
  • 3 Tbsp. grated Parmesan cheese
  • 1/2 tsp. paprika
  • parsley

Instructions

  1. Wash potatoes and slice into wedges.
  2. Arrange potato wedges in a buttered pie pan.
  3. Combine butter, lemon juice, grated lemon rind, and salt in a saucepan.
  4. Heat the mixture until warmed through.
  5. Pour the lemon butter mixture over the potatoes.
  6. Sprinkle grated Parmesan cheese over the top.
  7. Sprinkle paprika over the cheese.
  8. Bake at 400°F (200°C) for 40 minutes.
  9. Garnish with chopped parsley before serving.
