Ingredients

  • 1 1/2 lb. lean hamburger
  • 1 (16 oz.) can kidney beans
  • 2 tsp. chili powder
  • 1 cup chopped onion
  • 3 medium potatoes, peeled and sliced
  • 1 tsp. salt
  • pepper
  • 2 Tbsp. sugar
  • 1 (16 oz.) can chopped tomatoes

Instructions

  1. Press raw hamburger into the bottom of a 3-quart casserole dish.
  2. Sprinkle with salt and pepper.
  3. Layer the can of kidney beans with juice on top of the hamburger layer.
  4. Sprinkle with chili powder.
  5. Add chopped onion in a layer.
  6. Top with sliced potatoes seasoned with salt, pepper, and sugar.
  7. Pour undrained chopped tomatoes over the top.
  8. Cover and bake in a 400°F oven for 1 hour.
  9. Remove the lid and bake for another 20 minutes to remove excess liquid.
