Ingredients

  • 10 lb. peeled and chopped potatoes
  • 1 medium chopped onion
  • 4 oz. diced salt pork
  • 1 stick butter
  • 1 tsp. pepper
  • 1 Tbsp. salt
  • 1 tsp. parsley flakes
  • 1/4 tsp. oregano
  • approximately 1 1/2 gal. water
  • 1 Tbsp. milk

Instructions

  1. Wash clams thoroughly in fresh water to remove sand.
  2. Just cover clams with water and steam until they open, about 15 minutes. Remove clams from shells and chop them.
  3. Set aside the chopped clams.
  4. Saute chopped onion and salt pork with butter in a pan.
  5. Add all ingredients except the chopped clams to the clam water used for steaming.
  6. Add more water if necessary, then bring to a slow boil and cook for 8 to 10 minutes.
  7. Add the chopped clams and cook for an additional 2 to 5 minutes.
