  2. Bring the mixture to a boil.
  3. Reduce heat to medium and simmer, uncovered, for 20 to 25 minutes or until the liquid has evaporated, stirring frequently.

Tips & Substitutions

For added depth of flavor, consider using fresh corn instead of frozen. If you prefer a milder relish, reduce the amount of jalapeno or omit it altogether. You can also substitute white vinegar for dilled vinegar if necessary, though the flavor will be slightly different. Fresh herbs can enhance the dish; try adding chopped cilantro or parsley for a unique twist.

Frequently Asked Questions

Can I use fresh corn instead of frozen?

Yes, fresh corn can be used instead of frozen. Simply cut the kernels off the cob and measure out 1 1/2 cups. Fresh corn will provide a slightly sweeter and crunchier texture, enhancing the overall flavor of the relish.

How can I make this relish spicier?

To increase the heat level, add more jalapeno or include a pinch of cayenne pepper. You could also experiment with different hot peppers, such as serrano or habanero, depending on your heat preference. Just be cautious and adjust gradually.

Can I make this relish ahead of time?

Absolutely! This relish actually tastes better after sitting for a day as the flavors meld together. Prepare it in advance and store it in the refrigerator. Just remember to let it chill thoroughly before serving for the best flavor.
