Ingredients

  • 2 1/2 to 3 lb. rabbit, washed and cut in pieces
  • 3 c. red wine vinegar
  • 3 c. water
  • 1/2 c. sugar
  • 1 medium onion, sliced
  • 2 carrots, cut in pieces
  • 1 tsp. salt
  • 1 tsp. pickling spices
  • 1/4 tsp. pepper

Instructions

  1. Heat 3 tablespoons of fat in a Dutch oven.
  2. Add rabbit pieces and brown slowly, turning to brown evenly.
  3. Remove from heat. Gradually add 2 cups of the marinade.
  4. Cover and simmer for 45 minutes to 1 hour or until the meat is tender.
