Ingredients

  • 2 cups sour cream
  • 1 can cream of chicken soup (undiluted)
  • 32 oz. frozen cubed hash browns, thawed
  • 2 cups cubed cooked pork
  • 1 lb. Velveeta cheese, cubed
  • 1/4 cup chopped onion
  • 2 cups crushed cornflakes
  • 1/2 cup margarine, melted
  • 1 cup shredded Mozzarella cheese
  • 3 green pepper rings

Instructions

  1. In a bowl, combine sour cream and cream of chicken soup.
  2. Stir in thawed hash browns, cubed cooked pork, Velveeta cheese, and chopped onion.
  3. Transfer the mixture to a greased 3-quart baking dish.
  4. Toss crushed cornflakes with melted margarine.
  5. Sprinkle the cornflake mixture over the casserole.
  6. Bake uncovered at 350°F for 50 minutes.
  7. Sprinkle shredded Mozzarella cheese over the top.
  8. Bake for an additional 10 minutes until cheese is melted and bubbly.
  9. Garnish with green pepper rings before serving.
