Hassel Back Potatoes

Hassel Back Potatoes are crispy, tender baked potatoes with a decorative cut, topped with Parmesan cheese and bread crumbs, perfect as a hearty side dish for family dinners.

Ingredients

  • 4 medium oblong potatoes
  • 5 Tbsp. butter, melted
  • 1 tsp. salt
  • 1 Tbsp. bread crumbs
  • 1 Tbsp. grated Parmesan cheese

Instructions

  1. Peel potatoes or leave skins on and scrub with a brush.
  2. With a sharp knife, slice each potato crosswise every 1/4 to 1/2 inch, but not quite all the way through.
  3. Place potatoes in a buttered pie plate.
  4. Drizzle with 2 tablespoons of melted butter and sprinkle with salt.
  5. Bake for 30 minutes at 425°F.
  6. Sprinkle bread crumbs over potatoes and drizzle with remaining butter.
  7. Bake for 20 minutes.
  8. Sprinkle with Parmesan cheese.
  9. Baste with butter from the pie plate and bake for an additional 20 minutes or until tender.
