Ingredients

  • 3 to 4 cups leftover meat, diced
  • 1/4 pound bacon
  • 1/2 cup chopped onion
  • 4 medium potatoes, cooked and diced
  • salt and pepper
  • 3 to 4 tablespoons butter
  • 4 to 6 eggs, soft poached, fried or boiled
  • chili sauce

Instructions

  1. In a microwavable skillet, sauté bacon until crispy; drain and crumble. Pour off drippings.
  2. Add chopped onion to the skillet and brown.
  3. Add diced potatoes, bacon, and leftover meat to the skillet.
  4. Microwave on High until warmed through.
  5. Add salt and pepper to season, stir, and let stand briefly.
  6. Invert the skillet contents onto a serving platter.
  7. Top with soft-poached, fried, or boiled eggs.
  8. Serve with chili sauce and toasted muffins.
