Ingredients

  • 3 cups sifted Swans Down cake flour
  • 1 1/2 teaspoons salt
  • 1 cup shortening
  • 3/4 teaspoon almond extract or vanilla
  • 2 teaspoons baking powder
  • 1 3/4 cups sugar
  • 3/4 cup milk
  • 3 eggs

Instructions

  1. Measure flour, baking powder, salt, and sugar into a sifter.
  2. Stir shortening to soften.
  3. Sift dry ingredients.
  4. As you stir, add milk and extract.
  5. Beat for 2 minutes at medium speed of mixer.
  6. Add eggs and yolk.
  7. Beat for 1 minute more.
  8. Pour batter into a greased and floured 9-inch tube pan.
  9. Bake at 375°F for 50 to 55 minutes.
  10. Cool for 15 minutes, loosen, and turn right side up.
