Hazelnut Plum Cake
Ingredients
- 1 1/3 c. unsifted all-purpose flour ⓘ
- 3/4 c. sugar ⓘ
- 2 tsp. baking powder ⓘ
- 1 tsp. cinnamon ⓘ
- 1/2 tsp. salt ⓘ
- 10 Tbsp. butter, coarsely chopped ⓘ
- 3 large eggs, lightly beaten
- 2 Tbsp. grated orange rind ⓘ
- 1 tsp. vanilla
- 5 red plums, ripe and halved ⓘ
- 2/3 c. coarsely chopped, skinned, toasted hazelnuts ⓘ
Instructions
- Heat oven to 350°.
- Grease and flour 8-inch spring-form pan. In food processor fitted with chopping blade or in large mixer bowl, combine flour, sugar, baking powder, cinnamon and salt. Process or stir until just blended.
- Add butter, process briefly until just blended.
- Add eggs, rind and vanilla; process just until smooth batter forms.
- Scrape inside of bowl as necessary.
- Spread half of batter in prepared pan and bake 25 minutes.
