Ingredients

  • 1 can fat-free refried beans
  • 1/2 cup salsa
  • 1 (4.5 oz.) can chopped green chiles
  • 1/4 head lettuce, shredded
  • 2 cups chopped tomatoes
  • 1 (18 oz.) bag fat-free shredded cheese
  • 1 to 2 green bell peppers
  • 1 small onion
  • 1 package soft flour or corn tortillas

Instructions

  1. Mix refried beans, salsa, and chopped green chiles in a saucepan.
  2. Cook over medium heat until heated through.
  3. Meanwhile, prepare shredded lettuce, chopped tomatoes, chopped onion, and sliced green bell peppers.
  4. Heat tortillas in the oven at 325°F for 5 minutes.
  5. Place one large spoonful of the bean mixture onto the center of each tortilla.
  6. Top with lettuce, tomato, onion, peppers, and cheese to taste.
  7. Roll up the tortilla and serve.
