Ingredients

  • 1 lb. whole wheat elbow macaroni
  • 1 lb. low-fat ground turkey
  • 1 c. red pepper, diced
  • 1 c. yellow pepper, diced
  • 1 c. onion, chopped
  • 2 (15 oz.) cans tomato sauce
  • 1/4 c. lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp. basil
  • 1/2 tsp. oregano

Instructions

  1. Prepare macaroni as directed on the box; set aside.
  2. Saute onion, red pepper, yellow pepper, and garlic in a deep frypan.
  3. Add ground turkey and brown thoroughly.
  4. Drain off any fat and add tomato sauce and spices. Return to heat for 5 minutes and mix well.
  5. In a greased casserole dish, combine cooked macaroni and turkey tomato sauce with 1/4 cup lemon juice.
  6. Cover with grated Parmesan cheese.
  7. Bake for 45 minutes at 375°F.
