Ingredients

  • 1 can low salt cream of mushroom soup
  • 1 egg substitute
  • 3 slices whole grain bread (stale)
  • 3 cups freshly boiled yellow squash, drained
  • 1 cup reduced fat Colby cheese
  • 1/2 teaspoon freshly ground pepper

Instructions

  1. Mash the cooked yellow squash and crumble the stale whole grain bread slices.
  2. Set aside one-third of the bread crumbs for topping.
  3. In a large bowl, mix the mashed squash, egg substitute, cream of mushroom soup, 2 slices of bread, reduced fat Colby cheese, and freshly ground pepper.
  4. Transfer the mixture into a large baking dish.
  5. Sprinkle the reserved bread crumbs evenly over the top.
  6. Bake at 350°F until the top is golden brown, about 20 to 30 minutes.
