Ingredients

  • 1 cup light or dark raisins
  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 1 egg
  • 1/2 cup canned pumpkin
  • 1 3/4 cups sifted flour
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 3/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts

Instructions

  1. Rinse and drain the raisins.
  2. Cream the butter or margarine and sugar together until light and fluffy.
  3. Add the unbeaten egg and beat well to incorporate.
  4. Stir in the canned pumpkin until evenly mixed.
  5. Sift together the flour, salt, baking soda, cinnamon, ginger, nutmeg, and cloves.
  6. Gradually add the dry ingredients to the creamed mixture, mixing well.
  7. Stir in the vanilla extract, raisins, and chopped nuts.
  8. Drop small spoonfuls of the batter onto an ungreased cookie sheet.
  9. Bake at 375°F (190°C) for 13 to 15 minutes or until lightly browned.
