Ingredients
- 1 cup light or dark raisins ⓘ

- 1/2 cup canned pumpkin ⓘ
- 1 3/4 cups sifted flour ⓘ
- 1 teaspoon soda ⓘ

- 1/2 teaspoon ginger ⓘ
- 3/4 teaspoon nutmeg ⓘ
- 1/4 teaspoon cloves ⓘ
- 1 teaspoon vanilla ⓘ
- 1/2 cup chopped nuts ⓘ
Instructions
- Rinse and drain the raisins.
- Cream the butter or margarine and sugar together until light and fluffy.
- Add the unbeaten egg and beat well to incorporate.
- Stir in the canned pumpkin until evenly mixed.
- Sift together the flour, salt, baking soda, cinnamon, ginger, nutmeg, and cloves.
- Gradually add the dry ingredients to the creamed mixture, mixing well.
- Stir in the vanilla extract, raisins, and chopped nuts.
- Drop small spoonfuls of the batter onto an ungreased cookie sheet.
- Bake at 375°F (190°C) for 13 to 15 minutes or until lightly browned.
