- Preheat oven to 350°F.
- Spray an 8 x 4-inch loaf pan with oil.
- Sift together the flour, baking powder, baking soda, salt, and brown sugar; set aside.
- In a separate bowl, beat the egg until thick.
- Add the skim milk to the egg and continue beating until blended.
- Add the dry ingredients and chopped walnuts; stir until the mixture is moist.
- Turn the batter into the prepared loaf pan.
- Bake for 40 minutes, or until a tester inserted into the center comes out clean.
- Loosen the loaf from the sides of the pan.
- Turn out onto a wire rack to cool, right side up.
