Ingredients

  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 cup skim milk
  • 3/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F.
  2. Spray an 8 x 4-inch loaf pan with oil.
  3. Sift together the flour, baking powder, baking soda, salt, and brown sugar; set aside.
  4. In a separate bowl, beat the egg until thick.
  5. Add the skim milk to the egg and continue beating until blended.
  6. Add the dry ingredients and chopped walnuts; stir until the mixture is moist.
  7. Turn the batter into the prepared loaf pan.
  8. Bake for 40 minutes, or until a tester inserted into the center comes out clean.
  9. Loosen the loaf from the sides of the pan.
  10. Turn out onto a wire rack to cool, right side up.
