Instructions

  1. Steam yams in 1/2 cup water in a pot with a tight-fitting lid until tender, about 15 to 20 minutes.
  2. Peel and slice the yams, then layer them in a casserole dish.
  3. Pour a small amount of melted butter or margarine over the yams.
  4. Peel and core the apples, then slice them 1/2-inch thick and layer on top of the yams.
  5. Sprinkle raisins over the apples.
  6. Heat the apple juice to boiling.
  7. Combine cornstarch with 3 tablespoons of water, then add to the boiling juice and cook until the sauce is clear and thickened.
  8. Add honey or maple syrup to the sauce.
  9. Pour the sauce over the apples in the casserole.
  10. Top the casserole with wheat germ.
  11. Bake in a 350°F oven until the apples are tender, about 30 to 45 minutes.
