Ingredients

  • 10 3/4 oz. can condensed tomato soup
  • 1/2 cup water
  • 2 envelopes unflavored gelatin
  • 1/4 teaspoon salt
  • 1 cup cream-style cottage cheese
  • 1/2 cup mayonnaise or salad dressing
  • 1 cup chopped celery
  • 1/2 cup chopped radishes
  • 1/2 cup chopped walnuts or pecans
  • whole pimento strips
  • lettuce leaves
  • 1/2 chopped green pepper
  • 2 tablespoons sliced onion

Instructions

  1. In a medium saucepan, stir together the condensed tomato soup, water, unflavored gelatin, and salt.
  2. Let stand for 10 minutes to soften the gelatin.
  3. Stir over low heat until the gelatin dissolves completely.
  4. Pour the mixture into a large bowl and let it cool slightly.
  5. Add the cream-style cottage cheese and mayonnaise or salad dressing to the mixture and stir well.
  6. Cover and chill until the mixture is partially set, with the consistency of egg whites.
  7. Gently fold in the chopped celery, chopped green pepper, chopped radishes, chopped nuts, and sliced green onion.
  8. Turn the mixture into a mold and cover.
  9. Refrigerate until the mold is firm.
  10. Unmold the chilled tomato soup mold onto a serving platter.
  11. Garnish with lettuce leaves, whole pimento strips, and green pepper strips before serving.
