  • 2 Tbsp. brown sugar
  • 2 Tbsp. mustard
  • 2 cans tomatoes, cut (undrained)

Instructions

  1. Wash, sort, and mix all three beans together.
  2. Cover the beans with water and soak for 1 hour.
  3. Drain the beans and cover with water again.
  4. Add the ham hock and bring to a boil.
  5. Simmer for 1 1/2 hours or until beans are tender.
  6. In a skillet, brown the sausage with the cubed apple, chopped onion, and chopped celery.
  7. Drain off the fat from the sausage mixture.
  8. Stir the sausage mixture into the beans.
  9. Add brown sugar, mustard, and canned tomatoes; season with garlic powder, salt, and pepper.
  10. Cover and simmer for 10 to 15 minutes before serving.
