Ingredients

  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1/2 tsp. celery salt
  • 1/4 tsp. garlic salt or 1 clove garlic
  • 1/4 tsp. black pepper
  • 1/2 tsp. ginger
  • 3 lb. chuck roast, cut in 2-inch cubes
  • 2 Tbsp. bacon fat or shortening
  • 1 pt. canned whole tomatoes
  • 3 medium onions, sliced
  • 1/3 cup red wine vinegar
  • 1/2 cup molasses
  • 6 to 8 carrots, cut in diagonal 1-inch pieces
  • 1/2 cup raisins

Instructions

  1. Combine flour, salt, celery salt, garlic salt, black pepper, and ginger; sprinkle over beef cubes.
  2. Brown the coated beef in bacon fat or shortening in a Dutch oven.
  3. Add canned whole tomatoes, sliced onions, red wine vinegar, molasses, and 1/2 cup water; bring to a boil.
  4. Reduce heat and simmer covered for 2 hours.
  5. Add carrots and raisins; continue to simmer for 30 minutes or until carrots are tender.
  6. Serve hot with cornbread, brown rice, and salad.
