Ingredients

  • 1 Tbsp. diet imitation margarine
  • 2 cups soft bread crumbs
  • 2/3 cup skim milk
  • 1 slightly beaten egg
  • 2 Tbsp. chopped onion
  • 1 (16 oz.) can salmon, drained, boned and finely flaked
  • 3 hard-cooked eggs, chopped
  • 2 cups plain mashed potatoes

Instructions

  1. Melt margarine; stir in bread crumbs, 2/3 cup milk, beaten egg, chopped onion, and 1/2 teaspoon salt.
  2. Stir in drained, boned, and flaked salmon and chopped hard-cooked eggs.
  3. Turn the salmon mixture into a 9-inch pie plate.
  4. Combine mashed potatoes with 3 tablespoons milk, beat in remaining egg and 1 teaspoon salt.
  5. Spoon the potato mixture around the edge of the pie.
  6. Bake in a 350°F oven for 30 to 35 minutes until golden and heated through.
