Ingredients

  • 2 1/2 lb. large shrimp, shelled
  • 1 Tbsp. lemon juice
  • 3 Tbsp. salad oil
  • 3/4 c. rice
  • 1/2 c. minced green pepper
  • 1/4 c. minced onion
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. mace
  • dash of cayenne pepper
  • 1 can tomato soup
  • 1 c. heavy cream
  • 1/2 c. sherry
  • 3/4 c. slivered, blanched almonds

Instructions

  1. Cook the large shrimp in boiling, salted water for 5 minutes; drain and place in a 2-quart casserole.
  2. Sprinkle the cooked shrimp with lemon juice and salad oil.
  3. Cook rice according to package instructions.
  4. In a saucepan, combine tomato soup, heavy cream, sherry, minced green pepper, minced onion, salt, pepper, mace, and cayenne pepper.
  5. Simmer the sauce until heated through and slightly thickened.
  6. Add the cooked shrimp to the sauce and heat thoroughly.
  7. Stir in slivered, blanched almonds just before serving.
