Shrimp Harpin
Creamy shrimp dish featuring tender shrimp in a rich tomato and cream sauce, accented with almonds and sherry, perfect for elegant dinners or special occasions.
Ingredients
- 2 1/2 lb. large shrimp, shelled ⓘ
- 1 Tbsp. lemon juice ⓘ
- 3 Tbsp. salad oil ⓘ
- 3/4 c. rice ⓘ
- 1/2 c. minced green pepper ⓘ
- 1/4 c. minced onion ⓘ
- 1 tsp. salt ⓘ
- 1/8 tsp. pepper ⓘ
- 1/8 tsp. mace ⓘ
- dash of cayenne pepper
- 1 can tomato soup ⓘ
- 1 c. heavy cream ⓘ
- 1/2 c. sherry ⓘ
- 3/4 c. slivered, blanched almonds ⓘ
Instructions
- Cook the large shrimp in boiling, salted water for 5 minutes; drain and place in a 2-quart casserole.
- Sprinkle the cooked shrimp with lemon juice and salad oil.
- Cook rice according to package instructions.
- In a saucepan, combine tomato soup, heavy cream, sherry, minced green pepper, minced onion, salt, pepper, mace, and cayenne pepper.
- Simmer the sauce until heated through and slightly thickened.
- Add the cooked shrimp to the sauce and heat thoroughly.
- Stir in slivered, blanched almonds just before serving.
