Heavenly grilled chicken breasts marinated in a savory soy pineapple mixture, topped with melted Monterey Jack cheese—perfect for flavorful summer barbecues and family dinners.

Ingredients

  • 8 chicken breast halves, skinned and boned
  • 1 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup sherry
  • 1/4 cup firmly packed brown sugar
  • 3/4 teaspoon minced fresh garlic
  • 8 slices Monterey Jack cheese

Instructions

  1. Place chicken breasts in a large shallow dish.
  2. Combine soy sauce, pineapple juice, sherry, brown sugar, and minced garlic, mixing well.
  3. Pour the marinade over the chicken and let marinate for about 30 minutes.
  4. Remove chicken from marinade, allowing excess to drip off.
  5. Grill chicken breasts over hot coals for 25 minutes, turning and basting with marinade approximately every 5 minutes.
  6. Place a slice of Monterey Jack cheese on each chicken breast and grill an additional 5 minutes or until the cheese melts.
