Ingredients

  • 1 cup chopped celery
  • 3/4 cup chopped onion
  • 1 (4 oz.) can sliced mushrooms
  • 1 cup mushroom soup
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 2 cups cooked rice
  • 1/2 cup mayonnaise

Instructions

  1. Saute chopped celery, chopped onion, and sliced mushrooms in a small amount of oil until tender.
  2. Mix the sautéed vegetables with mushroom soup, milk, salt, cooked rice, and mayonnaise.
  3. Pour the mixture into a greased casserole dish.
  4. Sprinkle with paprika on top.
  5. Bake at 350°F for 45 to 60 minutes. For the last 15 minutes, sprinkle sliced almonds if desired.
