Ingredients

  • 1/2 cup large lima beans
  • 1/2 cup baby lima beans
  • 1/2 cup Great Northern beans
  • 1/2 cup pea beans
  • 1/2 cup yellow split peas
  • 1/2 cup green split peas
  • 1 large onion
  • 1/2 cup lentil beans
  • 1/2 cup pinto beans
  • 1/2 cup garbanzo beans
  • 1/2 cup black-eyed peas
  • 1/2 cup kidney beans
  • 1 quart canned tomatoes

Instructions

  1. Wash all beans and put them in a large kettle.
  2. Cover with water and soak overnight.
  3. Next morning, drain the beans and add 2 quarts of water.
  4. Simmer slowly while covered for 3 to 4 hours.
  5. Add chopped onion, canned tomatoes, and chili powder to taste.
  6. Simmer an additional 40 to 60 minutes.
  7. Optional: add pieces of lean ham or a ham bone at the beginning of cooking.
  8. You may also add carrots, celery, and other seasonings to taste.
  9. Use your imagination to customize flavors.
  10. The soup freezes well and is both delicious and nutritious.
