Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 egg
  • 1/4 cup canola oil
  • 1 - 3/4 cups milk

Instructions

  1. Sift together the flour, sugar, salt, and baking powder and set aside.
  2. In a separate bowl, blend the egg, canola oil, and milk.
  3. Gradually mix the dry ingredients into the wet ingredients until just combined. If the batter is too thick, add a little more milk.
  4. Heat a skillet or griddle over medium heat and lightly oil it.
  5. Pour batter onto the skillet to form pancakes of your desired size.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  7. Flip and cook for another 1-2 minutes until golden brown.
  8. Serve warm with toppings of your choice.
