Ingredients

  • 2 cups chicken broth
  • 1 can cream of chicken soup, undiluted
  • 1 1/2 cups yellow rice with saffron seasoning
  • 2 green onions, chopped
  • 2 Cornish hens, split in half lengthwise

Instructions

  1. Spray a 3-quart casserole well with nonstick spray.
  2. Whisk chicken broth and undiluted cream of chicken soup until smooth.
  3. Stir in yellow rice with saffron seasoning and chopped green onions, then mix well.
  4. Remove fatty pads and skin from the hens if desired.
  5. Arrange the split Cornish hens, cut side down, on top of the rice mixture.
  6. Season with salt and pepper.
  7. Spray a sheet of tinfoil and cover the casserole dish.
  8. Bake at 350°F for 1 1/2 hours.
