Herring-stuffed beets offer a delightful combination of sweet, earthy beets filled with tangy pickled herring and creamy sour cream, perfect as an elegant appetizer or light snack.

Ingredients

  • 24 small cooked beets
  • 6 oz. jar pickled herring tidbits
  • 1/4 cup sour cream
  • dill weed sprigs

Instructions

  1. With a small melon scoop, hollow out the top of each beet.
  2. Drain the pickled herring tidbits and coarsely chop them.
  3. Fill each hollowed beet with 1/2 teaspoon of chopped herring.
  4. Dot each filled beet with sour cream.
  5. Garnish with dill weed sprigs.
  6. Serve cold.
