Celestial Crusts are delicate, deep-fried pastries with a crispy exterior, subtly flavored with nutmeg, perfect for a sweet snack or dessert treat enjoyed warm or cold.

Ingredients

  • 6 egg yolks
  • 3 Tbsp. cream
  • 9 Tbsp. milk
  • 1/2 tsp. sugar
  • 1/8 tsp. salt
  • about 1 3/4 cups flour
  • nutmeg (optional)

Instructions

  1. Mix cream, milk, and unbeaten egg yolks together.
  2. Sift flour with sugar and salt into a bowl.
  3. Add the liquid mixture to the sifted dry ingredients and combine to form a dough.
  4. Form the dough into balls about the size of a half walnut.
  5. Roll each ball very thin on a floured board until nearly the size of a saucer.
  6. Slit each pastry four times.
  7. Fry in deep fat at 395°F (200°C), turning once, until golden brown.
  8. Sprinkle with sugar before serving.
