Ingredients

  • 3 lb. peeled, cooked hot potatoes
  • 8 oz. cream cheese
  • 1/4 c. butter or margarine
  • 1/2 c. sour cream
  • 1/2 c. milk
  • 2 lightly beaten eggs
  • 1/4 c. finely chopped onions (optional)
  • 1 tsp. salt
  • dash of pepper

Instructions

  1. In a large mixing bowl, mash the hot peeled, cooked potatoes until smooth with no lumps.
  2. Add the cream cheese in small pieces and the butter; beat well until melted and well mixed.
  3. Mix in the sour cream.
  4. In a small bowl, combine the milk with the eggs and finely chopped onions (if using).
  5. Add the milk mixture to the potato mixture along with the salt and pepper.
  6. Beat well until the mixture is fluffy.
  7. Transfer the mashed potatoes to a greased casserole dish.
  8. Refrigerate for several hours or overnight.
  9. Bake at 350°F (175°C) for 45 minutes until lightly browned.
