Mushrooms-Spinach Casserole

Ingredients

  • 2 lb. spinach
  • 1 lb. mushrooms
  • 2 Tbsp. butter
  • 1/2 cup milk
  • 1 can cream of mushroom soup
  • 1/4 tsp. salt
  • 1 cup shredded Cheddar cheese
  • pepper to taste

Instructions

  1. Wash spinach; cook in a small amount of water for 3 to 5 minutes. Drain well.
  2. Wash and pat dry mushrooms.
  3. Slice and sauté mushrooms in butter.
  4. Combine cream of mushroom soup, milk, 1/2 cup shredded Cheddar cheese, salt, and pepper to taste.
  5. Heat the sauce, stirring until smooth and cheese is melted.
  6. Layer spinach, sautéed mushrooms, and sauce in a greased 1-quart casserole.
  7. Top with remaining Cheddar cheese.
  8. Bake in preheated 350°F oven for 20 minutes or until cheese is bubbly.
