Ingredients

  • 1/2 lb. candied cherries (red and green)
  • 1/2 lb. candied pineapple, chopped
  • 4 cups chopped pecans
  • 1 box light brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 pound creamy butter
  • 1 1/2 teaspoons vanilla

Instructions

  1. Beat eggs one at a time into the mixture.
  2. Add sugar, butter, and vanilla; mix well.
  3. Combine salt and soda with sifted flour.
  4. Remove 1 cup of flour to roll pecans and candied pineapple in.
  5. Add floured fruits and nuts to the batter and mix well.
  6. Pour the batter into a greased and floured Bundt or round cake pan.
  7. Bake at 250°F (120°C) for 3 hours.
