Ingredients

  • 1 1/3 cups vegetable shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • Rind of 1 lemon, grated
  • 3 tablespoons milk
  • 4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Cream the vegetable shortening and sugar together.
  2. Beat in eggs, grated lemon rind, and milk until well combined.
  3. Stir in all-purpose flour, baking powder, and salt until the dough is smooth.
  4. Chill the dough for 1 hour.
  5. Roll out on a floured surface to about 1/8-inch thickness.
  6. Cut into 144 star-shaped cookies or holiday patterns.
  7. Cut 1-inch holes in the center of half the cookies.
  8. Bake on a cookie sheet in a preheated 375°F (190°C) oven for 7 to 10 minutes, until lightly browned.
  9. Cool the cookies; spread jam or jelly on the solid cookies.
  10. Top each jam-covered cookie with a cookie with a hole in the center.
  11. Sprinkle with confectioners' sugar before serving.
