Ingredients

  • 4 whole boneless chicken breasts
  • 2 cups seasoned bread crumbs
  • 2 tablespoons finely chopped onion
  • 1/2 teaspoon salt
  • pinch of pepper
  • 1/4 teaspoon poultry seasoning
  • 10 tablespoons butter or margarine
  • 1/2 cup hot water
  • 1 tablespoon minced fresh parsley
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon paprika

Instructions

  1. Place chicken breasts with skin side down on a work surface; pound lightly with a meat mallet to an even thickness for stuffing.
  2. Combine bread crumbs, chopped onion, salt, pepper, poultry seasoning, melted butter, hot water, and minced parsley to make the stuffing.
  3. Place about 1/3 cup of stuffing on each chicken breast; fold in half.
  4. Secure each with toothpicks.
  5. Combine flour and paprika; coat each stuffed chicken breast with the mixture.
  6. Place the coated chicken breasts, skewer side down, in a greased 11 x 7 x 2-inch baking dish.
  7. Drizzle with remaining melted butter.
  8. Bake uncovered at 325°F (160°C) for 1 1/2 hours or until tender.
