Ingredients

  • 1 can white or yellow hominy, drained
  • 1 can black-eyed peas or pinto beans, drained
  • 1 (4 oz.) can chilies, drained and chopped
  • 1 small can corn, drained
  • 3 oz. grated mild cheese (such as Monterey Jack, Mozzarella, Muenster, etc.)
  • 1 tsp. oregano
  • 1/2 tsp. cumin seed
  • 1/2 tsp. sage (optional)
  • hot pepper sauce

Instructions

  1. Preheat the oven to 375°F.
  2. Mix all ingredients in a casserole dish, sprinkling hot pepper sauce over the top.
  3. Cover and bake for 20 minutes.
  4. Uncover and bake for an additional 10 minutes.
