Chiles Rellenos are flavorful stuffed green chiles filled with melted cheeses, coated with a light egg batter, baked until golden, making a savory dish perfect for entertaining or family dinners.

Ingredients

  • 4 (4 oz.) cans whole green chiles
  • 1 lb. Monterey cheese, cut into 1/2-inch cubes
  • 1/2 lb. grated Cheddar cheese
  • 1 1/4 cups milk
  • dash of paprika
  • 5 large eggs
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon liquid red pepper
  • 1/2 teaspoon pepper

Instructions

  1. Rinse the seeds from the green chiles and dry them on paper towels.
  2. Cut the Monterey Jack cheese into 1/2-inch cubes, approximately 3 1/4 inches long.
  3. Insert a cube of cheese into each chile.
  4. Beat the eggs and add the flour until smooth.
  5. Add the remaining ingredients (milk, paprika, red pepper, pepper, salt) and beat until well combined.
  6. Place half of the stuffed chiles in a 7 x 13-inch baking pan.
  7. Cover with half of the grated Cheddar cheese.
  8. Repeat the layers with the remaining chiles and cheese.
  9. Pour the egg mixture over all the chiles in the pan.
  10. Bake at 350°F (175°C) for 45 to 60 minutes.
  11. Allow to set for 10 minutes before serving.
