Ingredients

  • 16 oz. jar tahini
  • 6 cloves garlic
  • 3 tsp. salt
  • 3/4 c. fresh lime juice
  • 1/2 c. cold water
  • 2 (28 oz.) cans garbanzo beans
  • Cayenne pepper
  • 2 Tbsp. olive oil
  • 3 to 4 Tbsp. fresh cilantro leaves

Instructions

  1. Add finely minced garlic and salt to the tahini.
  2. Mix in lime juice until completely absorbed.
  3. Add cold water and mix until smooth.
  4. Set aside the tahini mixture.
  5. Blend garbanzo beans in a blender or food processor until smooth.
  6. Add the pureed garbanzo beans to the tahini mixture and stir.
  7. Add cayenne pepper and mix well.
  8. If the mixture is too thick, add some of the reserved bean liquid until desired consistency is reached.
  9. Transfer to a wide shallow bowl.
  10. Spread with olive oil and sprinkle with chopped cilantro.
  11. Serve with warm pita bread.
