Ingredients

  • 1/2 cup bulgur
  • 2 cups boiling water
  • 3/4 cup tomato, chopped
  • 1/2 cup green onion, chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup cilantro, finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon vinegar
  • 1 1/2 teaspoons oil
  • 1/8 teaspoon pepper

Instructions

  1. In a medium bowl, soak bulgur in hot water for 1 hour; drain well.
  2. Add chopped tomato, green onion, parsley, and cilantro to the bulgur.
  3. Toss all ingredients together and chill before serving.
  4. Mix lemon juice, vinegar, oil, and pepper to make the dressing, then add to the salad before serving.
