Ingredients

  • 1 tsp. olive oil
  • 1/2 minced garlic clove
  • 1/4 c. diced onion
  • 2 medium zucchini, thin strips
  • 1 medium tomato, thin sections
  • 1 to 2 lb. lean boneless round steak strips
  • 1/4 tsp. oregano
  • salt
  • pepper
  • 1 Tbsp. parsley

Instructions

  1. Heat olive oil in a skillet.
  2. Add minced garlic and diced onion; sauté until fragrant.
  3. Add beef strips and cook through until browned.
  4. Add zucchini, oregano, salt, and pepper; cook until zucchini is tender but crisp.
  5. Add tomato slices and heat through.
  6. Sprinkle with parsley and lemon juice; toss gently.
  7. Serve with rice.
