Ingredients

  • 3/4 cup margarine
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs
  • 3/4 cup buttermilk
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon soda
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 1/2 cups plain flour

Instructions

  1. Cream margarine, sugar, and eggs until smooth.
  2. Add buttermilk and vanilla; mix well.
  3. In a separate bowl, measure all dry ingredients and mix together.
  4. Gradually beat or stir the dry ingredients into the wet mixture.
  5. Chill the dough for at least 30 minutes.
  6. Roll out the dough on a floured surface and cut into small cookies.
  7. Place a spoonful of rhubarb preserves on each cookie and cover with another cookie to form a sandwich.
  8. Press the edges together and perforate the top with a fork.
  9. Bake at 400°F (or 350°F if preferred) for approximately 10 minutes or until lightly golden.
