Ingredients

  • 3/4 cup raspberry vinegar
  • 3 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons minced basil
  • 1/2 teaspoon dried thyme
  • pinch of black pepper
  • 1 pound boneless chicken

Instructions

  1. In a shallow baking dish, combine raspberry vinegar, Dijon mustard, soy sauce, honey, minced basil, dried thyme, and black pepper.
  2. Add chicken to the marinade, turn to coat, and refrigerate for 15 minutes.
  3. Drain marinade from chicken and reserve the marinade.
  4. Transfer chicken to the broiler.
  5. Broil until no longer pink inside, about 5-7 minutes depending on thickness.
  6. Place the reserved marinade in a 1-quart saucepan.
  7. Simmer for 5 minutes or until reduced by half.
  8. Serve the chicken with the reduced marinade poured over it.
