Ingredients

  • 2 pkg. dry yeast
  • 1/2 cup warm water
  • 2 1/4 cups milk
  • 1/4 cup vegetable shortening
  • 1/3 cup honey
  • 2 1/2 teaspoons salt
  • 6 1/2 cups all purpose flour
  • 2 cups quick or old fashioned Quaker oats

Instructions

  1. Dissolve yeast in warm water.
  2. Pour milk over shortening, honey, and salt, then cool to lukewarm.
  3. Stir in 2 cups of flour, dissolved yeast, and oats.
  4. Mix well.
  5. Stir in enough additional flour to make a soft dough.
  6. Turn out onto a floured board and knead 8 to 10 minutes until smooth and elastic.
  7. Place in a large greased bowl, turn once to coat surface.
  8. Cover and let rise in a warm place for about 1 hour or until doubled in size.
  9. Punch down the dough.
  10. Cover and let rise for 10 minutes.
  11. Divide dough in half.
  12. Roll each half into a 15 x 9-inch rectangle, then roll up.
  13. Press ends and seams to seal.
  14. Place in two 9 x 5-inch loaf pans.
  15. Brush lightly with melted butter.
  16. Cover and let rise for about 45 minutes or until nearly doubled.
  17. Bake at 375°F (190°C) for about 45 minutes. Remove from pans and cool.
