Ingredients

  • 1 c. soft margarine
  • 1/2 c. honey
  • 1/2 c. sugar
  • 1 Tbsp. vanilla
  • 1 tsp. lemon peel
  • 2 eggs
  • 1/4 tsp. baking soda
  • 2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt

Instructions

  1. Set out 2 eggs to warm at room temperature.
  2. Preheat oven to 325°F (160°C).
  3. Set aside 3 bowls (1 large and 2 small) and a greased and floured baking pan measuring 6 x 3 1/4 x 2 1/2 inches.
  4. In a large bowl, cream together the soft margarine, honey, sugar, vanilla, and lemon peel until well blended.
  5. Add eggs one at a time, beating well after each addition.
  6. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the creamed mixture, mixing just until combined.
  8. Pour the batter into the prepared baking pan.
  9. Bake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
