- Set out 2 eggs to warm at room temperature.
- Preheat oven to 325°F (160°C).
- Set aside 3 bowls (1 large and 2 small) and a greased and floured baking pan measuring 6 x 3 1/4 x 2 1/2 inches.
- In a large bowl, cream together the soft margarine, honey, sugar, vanilla, and lemon peel until well blended.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, mixing just until combined.
- Pour the batter into the prepared baking pan.
- Bake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
