Ingredients

  • 3 eggs
  • 3/4 cup Washington honey
  • 1 12-ounce can condensed milk
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 16-ounce can pumpkin
  • Pastry for 9-inch single crust pie

Instructions

  1. For filling, in a mixing bowl combine eggs, honey, condensed milk, salt, pumpkin pie spice, and pumpkin.
  2. Beat well until smooth and well blended.
  3. Pour filling into a pastry-lined 9-inch pie plate.
  4. Bake for 15 minutes at 400 degrees Fahrenheit.
  5. Reduce oven temperature to 350 degrees Fahrenheit and bake for 45 minutes more or until a knife inserted near the center comes out clean.
  6. Cool the pie on a wire rack.
  7. Serve with whipped cream if desired.
  8. Cover and chill before serving.
