Ingredients

  • 1 (9-inch) double crust
  • 4 cups gooseberries
  • 1 3/4 cups sugar
  • 2 tablespoons minute tapioca
  • 2 tablespoons butter
  • 1/8 teaspoon salt
  • 1/2 teaspoon nutmeg

Instructions

  1. Wash berries and remove stems.
  2. Pat dry.
  3. Place berries, sugar, tapioca, butter, salt, and nutmeg in a large saucepan over low heat.
  4. Stir frequently and cook until sugar is melted and berries are soft.
  5. Let cool.
  6. Pour into pie shell and cover with top crust.
  7. Make 5 to 6 slashes in the top crust.
  8. Bake at 400°F for 15 minutes.
  9. Reduce heat to 350°F and bake for 30 minutes longer.
