Instructions

  1. Wash the dried light red kidney beans under cold, running water.
  2. Place the beans in a heavy 5-quart pot.
  3. Cover the beans with 2 quarts of water.
  4. Let the beans soak overnight or cover with water, bring to a boil, reduce heat, cover, and boil for 2 minutes.
  5. Turn off heat and let sit for 1 hour before continuing.
  6. Do not drain off the water after soaking.
  7. Two hours before serving, add chopped onions, chopped celery, and chopped bell pepper to the beans.
  8. Gently push the vegetables below the water line with a spoon.
  9. Cover the pot and bring to a boil.
  10. Reduce heat and simmer for 1 1/2 hours until beans are tender.
