Ingredients

  • 1 yellow cake mix
  • 1 box instant coconut pudding
  • 1 cup water
  • 1/2 cup oil
  • 4 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1 cup chopped nuts
  • 4 teaspoons sugar
  • 2 teaspoons cinnamon

Instructions

  1. Grease the bottom of a tube pan.
  2. In a large bowl, mix the yellow cake mix, instant coconut pudding, water, oil, eggs, vanilla, and baking powder; beat for 5 minutes.
  3. Mix chopped nuts, sugar, and cinnamon together.
  4. Put one-third of the nut mixture in the bottom of the tube pan.
  5. Add half a cup of the cake mixture over the nut layer.
  6. Add another one-third of the nut mixture, then the remaining cake batter.
  7. Top the cake with the remaining nut mixture.
  8. Bake for 50 to 60 minutes at 350°F.
