Ingredients

  • 1 package lime jello
  • 2 cups boiling water minus 2 tablespoons
  • 2 tablespoons vinegar
  • wilted vegetable salad (lettuce, tomatoes, chopped celery, carrots, onions, cucumbers, cabbage, radishes)
  • 1 tablespoon sugar
  • 1 small green chili, chopped

Instructions

  1. Mix 1 package of lime jello with 2 cups of boiling water minus 2 tablespoons and 2 tablespoons of vinegar until dissolved.
  2. Let the jello mixture cool to room temperature.
  3. Spread a layer of wilted vegetable salad (lettuce, tomatoes, chopped celery, carrots, onions, cucumbers, cabbage, radishes) in a 13 x 9‑inch casserole dish.
  4. Sprinkle 1 tablespoon of sugar and the chopped green chili over the vegetables.
  5. Pour the cooled jello over the salad, ensuring even coverage.
  6. Refrigerate until the jello sets, about 2 to 3 hours.
