  • 12 oz. sharp Cheddar cheese
  • 8 oz. Philadelphia cream cheese
  • 1/4 tsp. garlic powder
  • 1 Tbsp. Lea & Perrins
  • 1 c. pecans, chopped
  • cayenne pepper

Instructions

  1. At room temperature, cream Philadelphia cream cheese, garlic powder, and Lea & Perrins together.
  2. Add grated sharp Cheddar cheese and chopped pecans. Form into three logs, approximately 2 inches wide and 6 inches long.
  3. Hold each log in the palm of your hand and sprinkle the outside with cayenne pepper.
  4. Roll each log in wax paper and refrigerate overnight.
  5. Slice and serve with crackers.

Tips & Substitutions

For a smoother texture, ensure that the cream cheese is fully softened before mixing. If you prefer a milder flavor, consider using medium Cheddar cheese instead of sharp. If pecans aren't available, walnuts can make a great substitute. For an extra kick, add more cayenne pepper to suit your taste. Adjust the amount based on your heat preference.

Serving Suggestions

These cheese logs are perfect as an appetizer or snack for parties. Serve them with a variety of crackers, fresh vegetables, or even alongside a cheese platter featuring items like Guess Again Carrots. They pair well with a chilled white wine or a light beer for a delightful combination.

Storage & Reheating

Store any leftover cheese logs tightly wrapped in wax paper and then in an airtight container in the refrigerator. They can last for up to a week. If you want to serve them warm, let them sit out for about 15 minutes before slicing, or heat them gently in the microwave for a few seconds.

Frequently Asked Questions

Can I make these cheese logs ahead of time?

Yes, these cheese logs can be made a day in advance and stored in the refrigerator. This not only saves you time on the day of your event but also allows the flavors to meld together for a richer taste.

What can I use instead of pecans?

If you don't have pecans, walnuts or almonds can be excellent alternatives. Both nuts add a nice crunch and flavor that complements the cheese. You could also skip the nuts entirely for a nut-free version.

Can I freeze these cheese logs?

Yes, you can freeze the cheese logs before slicing them. Wrap them tightly in plastic wrap and then foil to prevent freezer burn. Thaw them in the refrigerator before serving, and enjoy them chilled or at room temperature.
