  • 1 lb. butter
  • 1 lb. light brown sugar
  • 4 c. plain flour
  • 1 Tbsp. baking powder
  • 6 eggs
  • 3 Tbsp. lemon extract
  • 1 tsp. salt
  • 1 lb. shelled pecans
  • 1/2 lb. crystallized pineapple
  • 1/2 lb. crystallized cherries

Instructions

  1. Chop the crystallized pineapple, crystallized cherries, and shelled pecans.
  2. Cream the butter and light brown sugar until smooth and fluffy.
  3. Sift the plain flour with baking powder and salt; set aside 1 cup of flour for coating the fruits and nuts.
  4. Separate the eggs; beat the yolks and add the lemon extract.
  5. Alternately add the egg yolks and the flour mixture to the creamed butter and sugar, beginning and ending with the flour mixture.
  6. Flour the chopped fruits and nuts with the remaining 1 cup of flour and fold into the batter.
  7. Beat the egg whites until stiff and fold into the batter gently.
  8. Pour the batter into a paper-lined tube pan.
  9. Let the cake stand overnight before baking or serving.
